Martin's Secret Pizza Pop-Up
Martin Philip is a generous genius when it comes to teaching the art of baking pizza in a home oven — that much is well established. What you didn't know until now is that Martin has been spending his free summer time operating a volunteer pizza pop-up out of his home. His wildly successful 'Anonymous Pizza' project supports Slice Out Hunger, a non-profit that purchases pizza from independent pizza makers and distributes them to soup kitchens and shelters. Martin's loving family and community also swoop in to make the most of this culinary altruism.
Kinda like that.
Basically this summer I've been taking some time off to doing just some things that I really enjoy, and for me that really centers around making beautiful things that are delicious, and then sharing 'em with people. It's really as simple as that. During this month I've tried to sort of pull back from some of my day-to-day and focus on the things that really feed me and keep me engaged as a baker.
And so I thought, well there's this thing called Slice Out Hunger, which is basically any monies raised go to buying people pizza who have issues of food access, right? So they're literally sending many, many boxes of pizza to things like homeless shelters, which is a great gesture, right? Pizza's the most universally loved food in the world and people in my community are signing up for slots and then we're throwing pizzas out the front door of my house. Nobody is happier about it than I am, I think, although I've seen some pretty happy people eating pizza, that's for sure. At your scheduled time, you pull up to my address. You just look for the sign. Just look for the big "Pizza" sign. I'll stick it in the hedge. You'll know. You'll know where you're going 'cause it says "Pizza." We'll come to the car with a large box. Once you have your pie, get the focaccia outta here. Pizza should be enjoyed warm, ya goombah. So anyway, I like to write silly things. Part of the fun for me is like knowing the people that are coming by the house, you know, that's kind of fun. Toppings have been pretty standard. Cheese, and then I'll do like a pepperoni with hot honey, sweet corn, white pizza with lime crema, cotija, jalapenos, roasted green chilies. And then I'm also gonna do a sausage and jardineira, so like that pickled sort of olive oil soaked. I guess that's it. So we can go down, and we can go sit down and enjoy our beverage. We'll come back in a minute and divide some dough. Okay, what's the time there, Anthem?
- 5:19.
- 5:19. Okay.
- He's pretty on top of things without my help, but I don't mind being a kind of side rail for the evening, keeping us on where we need to be. I think it's fun.
- [Crew Member] How Many pizzas are you making today?
- We got 10 pizzas on order, and that's my maximum.
- I like pizza with sausage on it. Pepperoni not so much. It gets a little too greasy for me, but all pizza from this kitchen is my favorite pizza. So. Got it. That's like the eighth time today. Maybe we do make some more crema. Everybody relax.
- [Anthem] I'm relaxed.
- It's a little bit funny because in some ways it's like I'm doing a lot of pizza, but in most ways, like this isn't that much pizza. Like in terms of, like, in commercial terms it's just not that much. I wish I could just have people eat at my house. That would make me happy because it would be the best for the pizza. What do you think of that?
- [Anthem] Hello.
- [Crew Member] What did you order?
- Oh, street corn cheese.
- Yeah, I think so. Yep. A good combo. Woo-hoo.
- All of this. Bye!
- [Martin] I am making like a tweaked version of a New York style. So really big, slightly puff edge crust. I want a really crisp bottom crust. Here I am. Hal, how are you?
- Hal.
- Martin.
- Nice to meet you.
- Likewise.
- [Hal] I love what you're doing.
- [Martin] Oh good. Yeah, have a look.
- [Crew Member] How do you feel?
- It's not about me and like my, like, pizza goals. It's about, you know, raising some money and we raised a lot of money. I think we're up to like 1,500 bucks or something, right? It's a lot of money. That's a lot of pizza, so that's cool. All right, well we got one more in the oven, then it's time to turn everything off, and clean up, and enjoy some pizza. Sit on the back porch. Yeah, good job. Thank you. Mmm.
- That's really good. I wasn't expecting to like the jardineira so much.
- Yeah, I wanted the thin, super flavorful dough with sourdough in it. We got great donations, we sold out. I mean, yeah. I don't think I'd change anything.
- Pretty amazing.
- [Martin] Yeah, I would say mission accomplished.
- [Crew Member] Whew! That was great. We're good, we can mark it right there.
- [Martin] I don't know, picking the grinning. Or at least picking.
