Light and Fluffy Biscuits
This recipe makes fluffy biscuits that are rich and tender, yet strong enough to stand up to gravy or breakfast sandwich fixings. Two ingredients that you don't ordinarily see in biscuits create this unique texture: An egg and shortening add both tenderness and strength to the dough so that you end up with light, fluffy biscuits that won't crumble. Come summer, they're just right for strawberry shortcake or simply spread with butter or jam.
Editor's note: This recipe was previously titled "Flaky Biscuits." After retesting in fall 2025, we found these biscuits to be more tender, light, and fluffy than flaky, so we updated the name to reflect that.
