Nicole Hampton is the baker, recipe developer, and writer behind Dough-Eyed, a blog dedicated to helping bakers navigate the unique challenges of high-altitude baking. Born and raised in Colorado, Nicole grew up in a high-elevation area where learning to adjust recipes for elevation wasn’t just a novelty — it was a necessity. What began as a personal journey to make her favorite cakes, cookies, and breads turn out just right quickly grew into a passion for teaching others how to do the same.

From a young age, Nicole found joy in the kitchen, often helping her parents whip up everything from pancakes on a Saturday morning to homemade desserts after dinner. That early spark turned into years of curiosity, experimentation, and plenty of trial and error, ultimately leading her to develop a collection of recipes that actually work for high-altitude bakers who are tired of flat cookies and sunken cakes.

Over the years, Nicole has tested and perfected hundreds of recipes, published two cookbooks — Sugar High and High-Altitude Breakfast — and built a community of bakers who share her love of scratch-made treats. Whether it's cookies, cakes, or breads, Nicole has a sweet spot for exploring all kinds of baked goods, always with an eye toward creating recipes that are both approachable and reliably delicious. Some of her favorites include a recipe for High-Altitude Banana Bread that slices beautifully, and soft and chewy High-Altitude Chocolate Chip Cookies.

When she’s not in the kitchen covered in flour, Nicole can usually be found enjoying life in Colorado with her family, a good book, and maybe a slice of cake.
