Class Description

Following up on our multi-day artisan bread classes, this intensive revolves around practicing the skills you’ve learned with an eye to ever-increasing proficiency. You’ll spend three days refining your shaping, scoring, and dough-handling techniques. Building on prior artisan bread classes, you’ll deepen your understanding of flavor development, baker’s percentages, flour selection, and use of preferments and sourdoughs.

  • Class size limited to 14 participants. 
  • Artisan Baking at Home and Artisan II: Bread Intensive are suggested prerequisites for this course.
