Chinese-inspired Dumplings, Noodles, and Sauces with Irene Li
Class Description
Join Mei Mei Dumplings co-founder and James Beard Leadership Award winner Irene Li for two days of cooking focused on Chinese-inspired dumplings, noodles, and sauces.
In this class, Irene will provide recipes and demonstrate techniques so that you can throw your own dumpling or noodle party at home!
We’ll start with the basics, including how to prepare and work with hot water and high gluten doughs, and then work as a group to learn dumpling filling recipes and a wide variety of dumpling shapes.
Students will learn how to prepare, store, and cook dumplings from start to finish, and how to hand-pull biang biang noodles to lengths of three feet or more!
Plus, we’ll cover a basic template for a flexible sauce that can be used to dip, douse, or dunk your hand-made treats.
Irene Shiang Li co-founded Mei Mei in Boston in 2013 and built the brand around ethical, sustainable sourcing and fair and transparent employment practices, including open book management. Mei Mei is now a dumpling company and Irene is now building Prepshift, a consulting business focused on aligning food business teams around their common goals and empowering them with education and transparency. She is a Zagat and Forbes 30 Under 30 honoree, six-time James Beard Foundation Rising Star Chef nominee, and 2022 James Beard Foundation Leadership Award winner. In 2023, Irene and her sister co-authored Perfectly Good Food: a totally achievable zero-waste approach to home cooking with W.W. Norton.
