Cherry Vanilla Cream Cheese Spritz Cookies

Often spritz cookies are all show, little taste. In contrast, the flavor of these cookies created by blogger Stefani Pollack from Cupcake Project, is outstanding. The centers are dotted with pitted cherries and juice oozes over them during the bake, lending tart fruit essence to these vibrant vanilla treats.

  1. Preheat the oven to 400°F. Have on hand an ungreased baking sheet.

  2. In a medium bowl, mix the butter, cream cheese, and sugar until light and fluffy.

  3. Mix in the egg yolk and vanilla bean paste or extract.

  4. Weigh your flour; or measure it by gently spooning it into a cup, then sweeping off any excess.  Whisk the flour and salt together in a small bowl, and add the dry ingredients to the butter mixture a little at a time, until just combined. Use the dough to fill a cookie press of your choice.

  5. Press the cookies onto the ungreased baking sheet, and place a frozen cherry in the center of each cookie.

  6. Bake the cookies for 8 to 10 minutes, or until lightly golden. Remove from the oven and cool on the baking sheet for a few minutes before transferring to a rack to cool completely.

Tips from our Bakers

  • The cookies pictured above are quite large. Different cookie presses produce different-sized cookies; if your press makes a smaller cookie and you end up with more than 3 dozen, halve the cherries before placing them atop the cookies.
