I made the Vanilla Cake today. I followed the recipe steps precisely. The one difference was that I used a monk fruit fine sugar replacement. The batter looked great but it baked into a compressed leaden board. Tastes good but the crumb is more like a solid pudding. Any ideas? Thanks.
