I made this, and while I wasn't sure it wasn't going to turn out like a brick as the dough was unlike any I'd made before, it turned out absolutely delicious, and not brick-like at all. I make sourdough weekly and am used to my dough becoming quite stretchy and supple as I move thru the four folds, but this never really achieved much stretch even at fold four. Regardless it turned out well and I will definitely make again.
