Thank you for all the tips. Bûche de Noelle has been one of the few things I haven't been able to pull off. It reminded me of information I learned about cocoa powder recently. Your average grocery store cocoa powder has a lower fat percentage and so it has a drying effect. It's relevant especially for brownies and cookies cookies (fudgey vs cakey), but I wonder if that could be a factor in this finicky cake too.
