Hi Linda, if you don't have a brotform, you could also use an appropriately sized bowl, lined with a close-weaved dish towel that has been generously dusted with flour (a half and half mixture of rice flour and unbleached all-purpose flour works well for this purpose). Or if you'd like to try making this recipe in pans, I'd suggest using two 9" X 5" loaf pans for the entire recipe. For best results, I would also recommend adding steam to the bake.
