Thanks for this idea. I didn't have scallions so I used finely chopped red onions instead. I also added a pinch of salt to the sourdough batter before I poured it into the pan because I wasn't planning to use a dipping sauce. It was delicious. Seemed like a cross between a Chinese scallion pancake and a South Indian Uttapam, one of my favorite snacks. Will make again soon!
