Hi there, Normajean! We haven't tried making toffee with monk fruit so we can't way for sure, we imagine it would caramelize the same way or have the same texture in the end. You might try finding a recipe that was created using monk fruit, a quick search on the internet for "toffee made with monk fruit" turned up a few recipe results!
