Hi, Marco! Based on your math, it sounds like you were counting the milk as only 87% water, which would bring the hydration calculation down to 73%. For the purposes of measuring for tangzhong, however, milk and water can be used pretty much interchangeably, which brings this recipe up to a 79% hydration level. Hope that helps!
