Hi Barb - My starter (Brady) has fully recovered. We spent the holiday weekend in upstate New York in a nice warm kitchen and Brady took off. I think it is really the temperature of my kitchen which was slowing him down. We got to enjoy a nice loaf with Christmas dinner!! Thank you for all of your assistance. I appreciated the opportunity to discuss these topics and to be able to read everyone's experience. Another question - how long do you think the starter discard can be stored in the fridge without going bad? I have a few months worth of starter that I want to use to bake some large batches of waffles and quick breads, but some of it is 4-5 months old. Thanks!
