Hi there, Julie! Potato flakes can be used in place of potato flour in a 1:1 swap by weight so that shouldn't have been an issue. How high did the loaf rise before baking? You'll want to let the dough rise until it's about a 1/4" below the rim of the pan before baking, it's OK to let the dough rise longer than an hour if it needs it. We hope this helps!
