Hi , I'd like to try your zucchini cheddar bread recipe. I live in North Carolina where the weather right now is still in the upper 80s and 90s, so there's lots of zucchini being harvested. My question: What adjustments do I need to make so this bread is gluten-free? Instead of regular all-purpose, should I use the KAF GF Measure for Measure, or another of your GF mixes/flours? Is xantham gum needed for this non-yeast recipe? Thanks
