Great question, Bob! It was hard to come up with the right consistency and exact weight of the soaker without making a little extra and being able to squeeze out excess water. Since it's just slice or two of old bread you're using, it didn't seem like a huge waste to make a bit extra. Feel free to experiment and cut back on these amounts a bit, as long as the consistency and weight of the soaker added to the bread remains the same.
