Sure, Chris! We haven't tried this technique ourselves but we don't see why it wouldn't work! We'd recommending checking on the rolls when you get up in the morning to see how they're coming along in the fridge. You may find they need to finish rising at room temperature or that they need to be baked to avoid over-proofing. Best of luck and happy baking!
