First time making pretzel bites, and they didn't turn out so good. I did not use King Arthur flour, but it was unbleached all purpose. I measured the flour by weight, and the dough turned out fine and rolled out nicely. It was very soft though. When I put them in the bath, they got really soggy and started to disintegrate. The did not rise nicely in the oven, but instead spread out. What did I do wrong.
