Great research PJ!

I alternate between all butter and half butter, half lard. I cut each into pieces and put in freezer. Then I put flour/salt/sugar in food processor and pulse a bit. Then I add the fat from freezer and pulse until blended. Then I put it all into bowl and add the half cup of cold water and mix with a large wooden spoon until it comes together. Then I put flatten disks into refrigerator or freezer.

Works great every time. I find the butter/lard mixture is easier to handle.
