I used to make cream puffs and profiteroles all the time - not sure why I stopped! My mother gave me a recipe for a Kahlua Paris-Brest that had Kahlua and crushed Heath in the filling - it was delicious. Or I would just do a ring and fill the center of the hole with fresh strawberries and do a chocolate glaze on top. So easy to make and so impressive looking. I might have to visit my cream puffs again soon. Though I will be visiting with choux paste this weekend to make churros for Cinco de Mayo! Love the Kahlua idea, betting the Heath filling gets nice and half-melty, half-crunchy too. ~ MaryJane
