Joanne here again. I made the muffins with a few changes for high altitude, and they were picture perfect and delicious. I added a heaping tsp. of flour for each cup, cut out 1/4 tsp baking powder and increased the oven temp to 380. I have heavy duty muffin pans, but for some reason, one of the cups in the pan exploded, threw the muffin up one rack and landed with a bang on the element at the bottom of the oven. The muffin was cooked, so it didn't make a mess. Very strange.
