Hi Jennifer- Unfortunately, I wouldn't recommend trying to convert this recipe to gluten-free. I think that you not only will have a flat, dense bread, but also that it may come out quite gritty and dry. We don't have an equivalent recipe for gluten-free flour, but you could try using another of our gluten-free biscuit recipes with cheese as an add in which I think would be a bit more like this recipe than any gluten-free bread recipe we have: Also, I would guess an internet search may yield some good results as well.
