Hi there, Christine! We hope you don't mind if we jump in here and answer your question about potato flour just incase Melissa doesn't see it. We like you to use potato flour in yeast breads because when combined with all-purpose, bread, or whole wheat flour, it helps to make yeast dough easier to shape, retain moisture and extends the shelf-life!
